Recipe Corner: Farmers’ Market Stew
Famers’ Market Stew
- 1 sweet potato, sliced thin
- 1 winter squash, sliced thin
- 5 carrots, sliced thin
- 2 yellow beets, sliced thin
- 1 onion, sliced thin
- 2 cups greens (arugula, spinach, swiss chard or kale)
- 1 cup lentils, cooked
- 12 cups water
- 4 TB olive oil
- 2 TB Braggs Amino Acids
Sauté onion with olive oil in a large pot for 5 minutes, add root vegetables except greens.
Simmer stew for about 30 minutes until root vegetables are tender. TIP: Always add greens last.
