Famers’ Market Stew


  • 1 sweet potato, sliced thin
  • 1 winter squash, sliced thin
  • 5 carrots, sliced thin
  • 2 yellow beets, sliced thin
  • 1 onion, sliced thin
  • 2 cups greens (arugula, spinach, swiss chard or kale)
  • 1 cup lentils, cooked
  • 12 cups water
  • 4 TB olive oil
  • 2 TB Braggs Amino Acids

Sauté onion with olive oil in a large pot for 5 minutes, add root vegetables except greens.

Simmer stew for about 30 minutes until root vegetables are tender. TIP: Always add greens last.
